Baked Brie Dip

Cook Time: 10 minutes
Servings: 8

Ingredients

  • 1/2 teaspoon finely chopped fresh rosemary
  • 2 tablespoons finely diced cranberries
  • 2 tablespoons chopped pecans
  • 1/3 cup apricot preserves, fig jam works great too
  • One 8-ounce round brie cheese
  • 8 ounces bacon
  • Crostini, crackers, pita chips and/or apple slices for serving
  1. Preheat oven to 350 degrees F.
  2. Open the package of brie cheese and place the cheese on a small cast iron skillet.*
  3. Use a small knife to score the top of the cheese. To do so, cut just the very top of the cheese in lines every ½ inch. Rotate the cheese 90 degrees and repeat.
  4. Spoon the apricot preserves over the cheese; sprinkle with finely diced cranberries, pecans and rosemary.
  5. Cut the bacon strips in to ½ inch pieces. Cook in a skillet until crisp.
  6. Use a slotted spoon to transfer the bacon onto the cheese.
  7. Bake for 10-12 minutes or until the cheese is soft and begins to ooze out when poked with a toothpick.
  8. Serve warm with crostini, crackers, pita chips and/or apple slices.

*You can also use a square baking dish or pie plate.
