Baked Brie & Bacon Dip

Ingredients

1/2 teaspoon finely chopped fresh rosemary

2 tablespoons finely diced cranberries

2 tablespoons chopped pecans

1/3 cup apricot preserves, fig jam works great too

One 8-ounce round brie cheese

8 ounces bacon

Crostini, crackers, pita chips and/or apple slices for serving
- Preheat oven to 350 degrees F.
- Open the package of brie cheese and place the cheese on a small cast iron skillet.*
- Use a small knife to score the top of the cheese. To do so, cut just the very top of the cheese in lines every ½ inch. Rotate the cheese 90 degrees and repeat.
- Spoon the apricot preserves over the cheese; sprinkle with finely diced cranberries, pecans and rosemary.
- Cut the bacon strips in to ½ inch pieces. Cook in a skillet until crisp.
- Use a slotted spoon to transfer the bacon onto the cheese.
- Bake for 10-12 minutes or until the cheese is soft and begins to ooze out when poked with a toothpick.
- Serve warm with crostini, crackers, pita chips and/or apple slices.
*You can also use a square baking dish or pie plate.
