Bruschetta Pork Chops Servings: 6 Ingredient List 1 ½ cups fresh diced tomatoes 1 tablespoon minced garlic 2 tablespoons chopped basil 1 tablespoon olive oil ¼ teaspoon salt ¼ teaspoon pepper Six thick-cut boneless ribeye pork chops ½ cup shredded mozzarella cheese Balsamic glaze In a mixing bowl, combine the tomatoes, garlic, basil, oil, salt and pepper. Cover and refrigerate until ready to serve. Preheat the grill to medium-high heat. Season the pork chops with salt and pepper then place them on the grill. Cook for 4-5 minutes. Flip the pork chops and continue to cook until the internal temperature reaches 145F. Sprinkle each pork chop with a heaping tablespoon of mozzarella cheese and let it melt. Remove the chops from the grill and let rest for 5 minutes. Top with the bruschetta mixture, drizzle with balsamic glaze and enjoy! Back
