Bruschetta Pork Chops

Ingredient List

  • 1 ½ cups fresh diced tomatoes
  • 1 tablespoon minced garlic
  • 2 tablespoons chopped basil
  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • Six thick-cut boneless ribeye pork chops
  • ½ cup shredded mozzarella cheese
  • Balsamic glaze
  1. In a mixing bowl, combine the tomatoes, garlic, basil, oil, salt and pepper. 
  2. Cover and refrigerate until ready to serve.
  3. Preheat the grill to medium-high heat.
  4. Season the pork chops with salt and pepper then place them on the grill. 
  5. Cook for 4-5 minutes.
  6. Flip the pork chops and continue to cook until the internal temperature reaches 145F.  
  7. Sprinkle each pork chop with a heaping tablespoon of mozzarella cheese and let it melt.
  8. Remove the chops from the grill and let rest for 5 minutes.
  9. Top with the bruschetta mixture, drizzle with balsamic glaze and enjoy!
