Easy Ground Pork Recipes Lettuce Wraps 1 tbsp vegetable oil 1 lb ground pork ½ c chopped onion 2 tbsp rice wine vinegar ¼ c soy sauce 2 tbsp peanut butter 1 ½ tbsp honey 3 cloves of garlic, minced 2 tsp fresh ginger, grated 1 small can chopped water chestnuts ½ c chopped green onions Lettuce (1 head iceberg lettuce OR 2 heads bibb lettuce pieces washed & dried) Sesame seeds Crunchy rice noodles Additional chopped green onions Additional soy sauce Lasagna Roll-Ups 1 lb ground pork 1 tbsp vegetable oil 1 ½ c cottage cheese 2 c shredded mozzarella cheese, divided 1 c grated Parmesan cheese, divided 1 egg ¼ c chopped fresh parsley 1 tsp garlic salt 1 tsp Italian Seasoning 8 lasagna noodles, boiled to al dente, drained 1 ½ c marinara sauce 2 tbsp fresh basil, chopped Ground Pork Chili 1 lb ground pork 1 tbsp vegetable oil 1 – 16 oz can chili beans 1 – 15 oz can diced tomatoes 1 – 15 oz can tomato sauce 2 c chunky salsa 1 packet chili seasoning Optional toppings: Sour cream, cheddar cheese, green onions, bacon pieces, crackers, etc. Lettuce Wraps To a skillet over medium high heat, add olive oil and ground pork. Cook pork until browned, stirring frequently, drain and return to skillet. Add onions to skillet, stir around for 2 minutes. Add rice wine vinegar, soy sauce, peanut butter, honey and garlic to skillet. Stir well and cook for 3 to 4 minutes, to cook onions throughout. Add water chestnuts and green onions, stir for 30 seconds to 1 minute. Remove from heat. (If mixture appears a bit dry, simply add 1 tablespoon water and simmer for a few seconds to loosen sauce.) Serve ¼ to 1/3 cup of mixture in a lettuce leaf cup, sprinkle on sesame seeds, rice noodles and additional soy sauce if desired. Lasagna Roll-Ups To a skillet over medium-high heat, add vegetable oil and ground pork. Cook pork until browned, stirring frequently; drain. In a medium bowl, add ground pork, cottage cheese, 1 cup mozzarella, ¾ cup grated parmesan, egg, chopped parsley, garlic salt and Italian seasoning. Stir until combined. Divide the filling evenly between the eight lasagna noodles and roll them up. Place the roll-ups end-side down in a greased 9x13 pan. Spoon the marinara sauce over the roll-ups and sprinkle remaining mozzarella and parmesan cheeses on top. Bake at 375 F for 25 minutes until cheese is golden brown. Garnish with fresh basil. Ground Pork Chili To a skillet over medium high heat, add ground pork and vegetable oil. Cook pork until browned, stirring frequently; drain. Add chili beans, tomatoes, tomato sauce, chunky salsa, and chili seasoning into a crockpot. Mix and cook on low for six to eight hours. Scoop into a bowl; top with sour cream, cheddar cheese, green onions, bacon, and crackers. Back
