Loaded Tater Tot Bites

Ingredients

48 crispy potato rounds

¼ cup sliced green onions

1 cup cooked and crumbled thick cut bacon

1 cup shredded cheese

Sour cream or ranch dressing, optional
- Preheat oven to 400F and grease a mini muffin tin with at least 24 cavities.
- Place two potato rounds into each of the 24 spaces; bake for 15 minutes.
- Use a rounded tablespoon or small lid (such as the lid for a bottle of vanilla extract) to press the potatoes up the sides of each cavity.
- Bake 8-10 more minutes until golden brown.
- Add about 1 teaspoon of shredded cheese and 1 teaspoon cooked and crumbled bacon in the center of each.
- Bake for 3-5 minutes or until the cheese is melted.
- Remove from the oven and top with green onions and sour cream, if desired.
NOTES
- Add diced jalapenos on top for added spice!
- Try using chipotle ranch or buttermilk ranch in place of the sour cream.
- If you can’t find the potato rounds, you can use 3-4 mini tater tots in place of the 2 potato rounds.
