Pork Parmesan Servings: 4 Ingredients 1 pound boneless pork loin ¼ cup flour ½ teaspoon salt ½ teaspoon garlic powder ¼ teaspoon pepper 2 eggs 2/3 cup panko bread crumbs 1/3 cup Italian style bread crumbs 1/3 cup grated parmesan cheese Olive or vegetable oil 6 tablespoons marinara sauce 1 cup shredded mozzarella cheese Cooked spaghetti and fresh basil for serving, if desired Preheat oven to 400F. Cut the pork loin into 6 slices, about ¾ inch each. Use a mallet to pound the pork loin slices one at a time until they’re about 3/8 inch thick; set aside. In a shallow bowl, combine the flour, salt, garlic powder and pepper. Coat each of the pork slices in the flour mixture and set aside. Whisk the eggs in a shallow bowl and in another bowl, stir together the panko, bread crumbs and parmesan cheese. One at a time, dredge the flour-coated pork in the eggs then coat in the bread crumb mixture. Heat about ½ inch of oil in a pan to about 350 degrees. Fry 2 pork slices at a time for 1-2 minutes on each side or until golden brown and place the cooked pork in a large baking pan. Repeat until all the pork has been fried. NOTE: The pork will not be fully cooked at this point. Top each piece with 1 ½ tablespoons marinara sauce and ¼ cup shredded cheese. Bake 10 minutes or until the thickest piece is 145F in the center. Served with cooked spaghetti and fresh basil, if desired. Back
